Thai Peanut Salad

Salad Ingredients:
🔸1 lb cooked shrimp (or chicken)
🔸1 cup carrots
🔸1/4 cup cilantro
🔸1 garlic clove, large
🔸1 cup red bell pepper
🔸1 head romaine lettuce
🔸1 cup snow peas
🔸1/2 cup quinoa or rice
🔸2 cups cabbage mix
🔸1/2 cup almonds

Dressing Ingredients:
🔸1 dropper of SweetLeaf liquid stevia
🔸2 tsp creamy peanut butter
🔸3 tsp Bragg liquid aminos
🔸1 tsp salt
🔸2 tbsp rice vinegar
🔸2 tbsp sesame oil

Directions:
Whisk together all ingredients of the dressing. Toss all salad ingredients in a large bowl, and drizzle the dressing over the top. Stir everything together until it’s well covered. Enjoy!
