Brooke Knowles

Office Manager & Wellness Account Executive

Brooke is a graduate of the University of Wisconsin Oshkosh, where she earned a Bachelor’s degree in Kinesiology with an emphasis in Exercise Science, Fitness, and Wellness. During her academic career, she also obtained certification in Consumer Wellness Advocacy (CWA), further strengthening her foundation in holistic health.

Brooke began her professional journey as a personal trainer, where she quickly recognized a recurring challenge among clients: many were relying solely on exercise to achieve weight loss and wellness goals, often overlooking the critical roles of nutrition and lifestyle habits. This realization sparked a deeper interest in functional medicine and integrative nutrition, where she could address the root causes of chronic symptoms and disease.

Since joining Nutritional Healing over nine years ago, Brooke has helped countless clients transform their health by identifying underlying imbalances, reducing inflammation, and building personalized, sustainable nutrition and lifestyle plans. Her approach blends science-based strategies with practical coaching, empowering clients to take control of their health for the long term.

Brooke is also deeply committed to her community. She has served as a Fox Cities Chamber Ambassador since 2017 and is known for her active involvement in networking, mentoring, and volunteering initiatives throughout the area.

Outside of her work, Brooke enjoys spending time with her husband and two young sons. She cherishes weekends at her family’s cabin up north, being outdoors, and cheering on her favorite football team. Go Pack Go!

Lisa Hofacker

Nutrition Counselor & Program Coordinator

Lisa is a UW Green Bay graduate with a Bachelor’s degree focusing on Human Development and Human Biology specializing in Nutritional Science.

Promoting healthy living through all stages of life and educating the importance of nutrition is Lisa’s passion. Her past experience has allowed her to focus on infant and childhood nutrition along with maternal health, from pregnancy through post-partum. Lisa’s hope is to integrate nutrition into a healthy lifestyle to help families and individuals reach their health goals. Time outside of the office is spent with her husband and two young daughters always looking for the next adventure.

Erin Bartelt

Nutrition Counselor & NH Ambassador

Erin is a UW–Green Bay graduate with a Bachelor’s degree in Human Biology and a minor in Psychology. Her personal health journey led her to the field of functional medicine after experiencing firsthand the limitations of conventional care. Over the past ten years at Nutritional Healing, Erin has developed a deep passion for helping clients identify and address the root causes of chronic illness through an individualized, science-based approach.

She is committed to creating tailored wellness plans that integrate nutrition, lifestyle, and targeted support to promote optimal health. Erin believes that building a strong practitioner-client partnership is essential to achieving lasting results and empowering clients to take an active role in their healing journey.

Outside the office, Erin enjoys spending time outdoors with her husband and their two dogs. She also shares her home with three energetic cats. In her free time, she loves camping, kayaking, hiking, and exploring state parks across Wisconsin.

Hollie Glick

Nutrition Counselor

Hollie graduated from the Nutritional Therapy Association as a Nutritional Therapy Practitioner. She is extremely passionate about helping others along with all things nutrition, health, and wellness and is excited to combine her two passions to help clients feel comfortable in their own skin.

She believes in a whole-body, holistic, bio-individual approach to support the body’s natural abilities to thrive. While working with clients she hopes to bring them empowerment, confidence, and health, while walking alongside them on their new exciting journeys.

In her free time, she enjoys cooking, reading, spending time with family, hiking, and enjoying all things outdoors.

Savanna Krull

Nutrition Counselor

Savanna is a graduate of UW-Stevens Point with a Bachelor’s degree in Health Promotion & Wellness.  She was driven to this path because she wanted to be able to help everyone through all walks of life and health experiences, and find the best versions of themselves. Getting to watch and help them achieve that goal is something she has always strived to be a part of and assist with. A big focus during her schooling was looking at all dimensions of wellness that are within a single person, and determining how all those dimensions play a bigger role in their health, well-being, and quality of life. She believes that empowering people to make sustainable lifestyle changes can lead them to lasting results.

In her free time, Savanna enjoys spending time with her friends and family. She also loves reading, trying out new coffee shops, going to community events, and spending time outdoors playing with her dog, Dale.

Kari Paul

Cookbook Author & Client Relations Specialist

Kari is a wife and mother of two wild boys! Past health experiences allowed her to have an entirely new respect for fitness and nutrition, and she loves working in a healthy environment with such knowledgeable and trustworthy people.

The appreciation Kari has gained for nutrition and how powerful of an impact it can have on one’s life has been eye-opening! Kari plans to keep this mindset continuous throughout life and encourage her husband and kids to make healthy choices daily.

Kari is the author of both our #NHapproved cookbooks, which everyone should check out! In her free time, she enjoys cooking, hiking, and biking with the family, going for walks with their dogs, reading and creating books for her kids, and spending time up north to recharge at the family cabin.

Kim Larsen

Client Relations Specialist

Kimberly is one of our front desk Client Relations Specialists. She believes in the power of nutrition and the importance of it for your overall health.

Kimberly is a student at Fox Valley Technical College working towards her associate degree. She lives in Appleton with her boyfriend and two cats.

In her free time, she enjoys working on DIY projects, hiking, traveling, and spending time with friends and family.
