Marvol
Marvol is a cozy fine-dining destination in downtown Appleton, offering an intimate atmosphere and a weekly-changing menu of creative small plates. Located at 126 E Pacific Street, Appleton, WI 54911, Marvol delivers a fresh, seasonally driven dining experience that invites guests to return again and again for something new.
The restaurant is the second culinary venture by Adam Marty, who also owns the well-loved Appleton spot Ellinor. With Marvol, Marty extends his vision of thoughtful, ingredient-focused dining into a smaller, more refined setting. His emphasis on seasonality and innovation means guests can expect unique flavors and dishes that evolve week to week.
In one interview, the owner explained, “I opened Ellinor because I wanted to start a small, neighborhood restaurant.” “It’s tiny, it’s hard to get to, but that’s kind of the draw. With Marvol, we’re just taking it to the next level and having fun with it…Marvol is meant to be more of a little brother to Ellinor rather than a duplicate.”
Joining Marty on his new endeavor is Patrick Frawley, owner of Commodore Club in Appleton. They have teamed up to create a one-of-a-kind cocktail menu, of which he has full creative control. Patrick explains, “I’m just really excited for us to do our complicated things, you might not be able to entertain in other respective businesses.”
During our visit, Kimberly and Erin shared three standout small plates:
Trout Crudo – delicate, fresh, and beautifully balanced
Kendall’s Green Salad – crisp, vibrant, and perfectly dressed
Scallops – seared with precision and bursting with flavor
Each plate reflected the restaurant’s dedication to quality ingredients and creative presentation.
Marvol is intentionally small and cozy, making it perfect for an intimate dinner or special night out. Hours are Thursday through Saturday from 4:30 PM to midnight, with reservations available earlier in the evening and later hours designed for a more relaxed dining pace. We highly recommend making a reservation in advance.
