Happy Cino De Mayo! Celebrate tonight by making delicious and healthy Fajitas!
We got this recipe from our Pinterest board and have tried it ourselves….and it is DELICIOUS!
Serves: 2 (will have leftovers for lunch)
Cinco De Mayo Fajitas
3 Chicken Breasts
1 Red, 1 Green, 1 Yellow Pepper
1 Yellow Onion
1 Head of Bibb Lettuce
1 Packet of Organic Gluten Free Fajita Seasoning
**Remember to buy ORGANIC if possible!
Guacamole (for topping)
2 avocados
1 Jalapeno
1 clove garlic
1 lime
Directions:
Cut up the chicken and cook in a frying pan. In a separate fry pan, cook the peppers and onion until they are browned. Then, add the chicken into the veggie pan and add the fajita mixture. This will have to simmer and cook down for a while, follow the instructions on the back of the seasoning packet. Meanwhile, cut the end of the lettuce off and each individual leaf will come apart, these are the “tortillas”. To make the guacamole, add everything together in a bowl and mash to your preferred consistency. Enjoy!
