Today calls for soup! Whatever kind you choose, you’ll want to add ‘Egg Drop Soup’ to your menu plan for something new for your taste buds!
Ingredients:
▪️8 cups (32 oz.) Chicken broth
▪️4 tbsp Tapioca starch
▪️1/2 Cup water
▪️1 tsp Pepper (or to taste)
▪️1 tsp Salt (or to taste)
▪️4 Eggs
▪️2 tbsp Water
Directions:
▪️Boil Broth
▪️Mix in tapioca starch until thickened
▪️Season with salt & pepper
▪️Reduce heat to low
▪️Mix egg & water to “scramble”
▪️Slowly drizzle egg into broth
▪️Cook a few minutes and continue to season to taste
▪️Enjoy!
* Can add ground ginger, onion powder, or chives to taste if desired *
