Healthy Peanut Butter Cups

Nutritionist Kim has a healthier homemade NH Approved Easter ‘treat’ version of Reese’s peanut butter cup eggs! They taste identical with NO added sugar.

Ingredients:
-1/2 cup organic smooth peanut butter (only peanuts + salt)
-1/4 cup coconut flour
-2-3 droppers of liquid stevia (Sweet Leaf brand is our favorite)
-1/2 cup chocolate chips (we used ‘Sweet Luv’ brand chocolate chips)

Directions:
Line a baking sheet with parchment paper. In a bowl, mix peanut butter, coconut flour and stevia. Roll 1.5 – 2 Tbsp of dough into balls and form into egg shapes on the lined baking sheet. Freeze for 15 minutes.
In a separate bowl, melt chocolate chips and let cool. Coat each egg in the melted chocolate using a spoon and place back on the lined baking sheet. Use leftover chocolate to drizzle over each egg and add sea salt if desired. Freeze for another 10 minutes and enjoy! (Best if stored in the fridge or freezer).
