Lentil Tacos
1/2 yellow onion chopped
2 t minced garlic
2-4 T olive oil
1 c dried lentils
1 heaping T chili powder
1/2 T cumin
1 t oregano
2.5 c broth (chicken or vegetable)
3/4 c salsa (Kari’s salsa on previous blog post)
Sauté onions and garlic in olive oil in a skillet.
Add lentils and seasonings, cook about 1 minute. Add the broth and salsa and reduce heat to simmer the mixture. Cook around 30 minutes or until sauce has thickened and lentils are tender. Serve in lettuce wraps with some cilantro and cheese for a delicious taco!
