Kari’s Sweet and Sour Cucumber Salad

2 large cucumber

1 small onion
3 T olive oil
2 T white vinegar
3 T lemon juice
1 clove fresh garlic minced
1 t dill
1 t dried cilantro
1/8 t garlic powder
1 t salt
1/4 t pepper
1/2-1 T powdered stevia
2 T toasted sesame seeds

Toast sesame seeds in pan for a minute or two. Careful, they cook fast, set aside for now.
Spiralize or cut your cucumber and onion into small chunks. Put into a large bowl.
In separate bowl add the oil, vinegar, lemon, garlic, spices and stevia. Mix it up and taste it to see if you need to alter anything.
Toss the dressing over the cucumbers and onions and add the toasted sesame seeds at the end.
Fresh cilantro would be great with this as well as red pepper flake to add some spice! Tastes great if it sits for a bit!
