Pesto Veggie Stir Fry with Chicken or Shrimp

Ingredients:

Chicken or Shrimp

Veggies of choice: organic cherry tomatoes and mushrooms

Pesto:

2 cups basil leaves
1/2 cup raw sunflower seeds, soaked and drained
2 small cloves of garlic (or 1 large)
Juice of 1 lemon
1/2 cup extra virgin olive oil

 

Instructions:

Start by cooking the chicken or shrimp. While that is cooking place the basil, sunflower seeds and garlic in the bowl of a food processor or blender. Process until coarsely ground. Add the lemon juice. Pulse a few times, then slowly stream in the olive oil. Process for a minute or so, making sure that everything is well incorporated. Once your chicken or shrimp is cooked, add the pesto mixture and chopped cherry tomatoes and mushrooms to your pan. Cook for a couple of minutes and then enjoy!
