Spaghetti Squash Chicken Alfredo

This spaghetti squash chicken alfredo recipe offers a healthier alternative to traditional pasta dishes. Spaghetti squash replaces pasta, providing a lower-carb option with a similar texture. The addition of chicken adds protein, and Alfredo sauce contributes a rich and creamy flavor. This is a delicious and satisfying meal, especially during these colder winter months!

Spaghetti Squash Chicken Alfredo

Ingredients:
1 lb chicken breasts – cubed and cooked
1 medium white onion, diced
1 medium sized spaghetti squash – cooked
1 jar Primal Kitchen Garlic Alfredo Sauce
3 cups broccoli florets
1/2 tsp salt (plus more for seasoning chicken)
1/2 tsp garlic powder
1/2 tsp pepper (plus more for seasoning chicken)
1/2 tbsp olive oil (or avocado oil)

Instructions:
1. Cook spaghetti squash, however desired, in the oven, microwave or crock pot.
2. Begin cooking onions in a skillet, once translucent add cubed chicken with desired spices.
3. Once cooked, add the chicken breasts/onions mixture, “noodles” from spaghetti squash, alfredo sauce, broccoli, salt, pepper and garlic powder to a bowl to mix. Transfer to a casserole dish.
4. Bake for 30 minutes – 45 minutes.
5. Remove, dish into bowls and enjoy!
