Stone Soup

Our team member Karianne gave her boys the interactive cooking task of making ‘Stone Soup’ this weekend.
The first step was to pick their chosen stone for the soup which was then soaked and washed thoroughly before cooking. The next step was to prep all the ingredients together as a family to take part in preparing this nutritious meal. Getting children involved with meal prep can lead to much more interest to what’s being served on the table!
The Stone Soup short story with pictures teaches children always to strive to share their belongings with those around them. Sharing and caring for others are one of the most important qualities we humans possess. It is one of the few things that make us human.
The soup tasted delicious because it was made with different vegetables and especially by the teamwork of villagers. And the addition of the stone is an ancient cooking technique to heat food with directly exposing it to flame, reducing the likelihood of burning, and allowing the construction of stews and soups.
Ingredients:
• 1 tablespoon olive oil
• 1 medium onion, small dice
• 3 medium carrots, small dice
• 3 ribs celery, small dice
• 3 garlic cloves, minced
• 1 teaspoon oregano
• 1/2 teaspoon ground cumin
• 1/2 teaspoon paprika
• Pinch of cayenne (optional)
• 2 tablespoons tomato paste
• 6 cups vegetable broth plus more as needed (preferably low sodium)
• (14-ounce) can diced fire roasted tomatoes or diced tomatoes
• 1 cup red lentils, rinsed
• 1 small green cabbage, shredded, about 4 cups
• Zest and juice one half lemon, plus more lemon juice to taste
• Salt and freshly ground black pepper to taste
• 1/3 cup chopped parsley for garnish
• Stone

Directions: Olive oil heated up in the pot. Add celery, carrot, onion for a few minutes. Add tomato paste, diced tomatoes, spices and cook another few minutes. Add broth, cabbage, lentils and lemon and simmer for 15-20 minutes.
