Superhero Muffins

Ingredients:
(dry)
– 1 cup oats (could substitute quinoa flakes)
– 2 cups almond flour (or any flour alternative — just look up conversions)
– 1/2c chopped walnuts (or nut of choice)
– 1/4c dried cranberries
– 2 tsp cinnamon
– 1/2 tsp nutmeg
– 1/2 tsp salt
– 1 tsp baking soda
(wet)
– 1/2 cup shredded carrots
– 1/2 cup shredded zucchini
– liquid stevia (add 1 tsp at a time and taste for preference — up to 4 tsp)
– 1tsp vanilla
– 6 Tbsp coconut oil (melted)
– 3 eggs

Directions:
– Mix dry ingredients together in a bowl. In a separate bowl, mix all wet ingredients together.
– Mix the wet mixture into the dry mixture until combined.
– Scoop into muffin tin (12)
– Bake at 325 for 30 minutes
