Sweet Potato Tacos with Avocado and Cucumber Salsa

Ingredients:

Sweet potatoes:

3 medium sweet potatoes

1 tablespoon of paprika

1 tablespoon olive oil

½ tablespoon of salt

 

Caramelized Onion:

1 onion

½ tablespoon of pure honey

Salt and Pepper

 

Cucumber and Avocado Salsa:

1 Cucumber

1 ½ avocados

2 green onions

fresh cilantro

1 teaspoon of sesame oil

juice of 1 lime

salt and pepper

 

Lettuce (for the wrap)

 

Instructions:

Pre-heat the oven to 375 degrees.

Cut sweet potatoes (with skins) into sticks and season with olive oil, paprika, and salt. Place in a baking dish and roast for 20 minutes

For the salsa, cut the cucumber and avocado in small cubes. Chop green onions and cilantro. Mix everything together and season with sesame oil, lime juice, salt, and pepper.

For the caramelized onions, chop the onion and sauté in a pan with salt and pepper. Once it softens, add honey and sauté for 1 more minute or until the honey melts and covers the onions.

To serve, take a head of lettuce pull some off and use as your “tortilla”. Put 4 sticks of sweet potatoes in each, add caramelized onions, and the cucumber and avocado salsa on top.
