Thai Peanut Salad

Salad Ingredients:
๐Ÿ”ธ1 lb cooked shrimp (or chicken)
๐Ÿ”ธ1 cup carrots
๐Ÿ”ธ1/4 cup cilantro
๐Ÿ”ธ1 garlic clove, large
๐Ÿ”ธ1 cup red bell pepper
๐Ÿ”ธ1 head romaine lettuce
๐Ÿ”ธ1 cup snow peas
๐Ÿ”ธ1/2 cup quinoa or rice
๐Ÿ”ธ2 cups cabbage mix
๐Ÿ”ธ1/2 cup almonds

Dressing Ingredients:
๐Ÿ”ธ1 dropper of SweetLeaf liquid stevia
๐Ÿ”ธ2 tsp creamy peanut butter
๐Ÿ”ธ3 tsp Bragg liquid aminos
๐Ÿ”ธ1 tsp salt
๐Ÿ”ธ2 tbsp rice vinegar
๐Ÿ”ธ2 tbsp sesame oil

Directions:
Whisk together all ingredients of the dressing. Toss all salad ingredients in a large bowl, and drizzle the dressing over the top. Stir everything together until it’s well covered. Enjoy!
